It is rare that one soup recipe can be shared and loved by so many folks. Since Taco Soup began making the rounds, I think most everyone has jumped on board and by changing so many ingredients, and it is still delicious. I think I have about as many Taco Soup Recipes as I do for Strawberry Pie!
With all the strange weather we are having, you can probably serve it on most any day during the week.
I remember not long ago that we decided to take the grandkids to Biloxi and let them run on the beach.
Of course, leaving the house, we noticed that the temperature was 32 degrees. No problem, we knew it would be a matter of days before we could pick up the beach towels that we had already packed!
And I remember so vividly that if the weather was not as we had planned, Rev. Ed Jussely would always say “And this too shall pass.” No matter what someone in our Sunday School Class would remark, he always came back with, “Now daughter, this too shall pass.” And it always did! This was during the time that our sons played baseball as well as our other friends. And no matter what, “This too shall pass” and it always did. I think that is a good memory, with an important truth to live by.
He was a special man and is still missed by so many.
So, I decided to make a big pot of Taco Soup!
Here is my favorite recipe, but if you have another recipe you would like to share, please send it to me.
I don't think you can mess this one up!
Taco Soup
1 pound ground chuck
1 pound ground beef
1 small onion, chopped
1 can stewed tomatoes
(15 ounce)
1 can mild Rotel tomatoes
1 can creamed style corn
1 can whole kernel corn
1 can red kidney beans
2 cans pinto beans
2 packages Taco
Seasoning Mix
1 package dry Ranch
Seasoning Mix
In a large pot, combine ground chuck and ground beef. When it is almost done, add the chopped onion.
In a large crock pot, add both cans of tomatoes, both cans of corn, 1 can red kidney beans, pinto beans and the seasoning mixes. Add this to the crock pot and simmer until warm.
Garnish with sour cream, or grated cheese when serving. Add garlic bread!
I cannot believe it is the end of January. Still don’t know where the time goes, but we do have two teenagers now. That is hard to believe.
Will get back on the gardening hints.....when the rain stops and we can go outside and dig in the dirt!
