One of my favorite recipes that I make is the “Easy Mixer Dinner Rolls”. Ingredients:
2 packages of active dry yeast,
2 cups of warm water (110 – 115 degrees),
½ cup instant nonfat dry milk,
1/3 cup melted margarine, 1 tablespoon salt,
3 tablespoons sugar,
5 1/2 – 6 cups of all-purpose flour.
Directions:
1. Sprinkle yeast over warm water in a large mixer bowl. Add dry milk, sugar, salt, melted margarine, and 3 cups flour. Blend at low speed until moistened, then beat for 3 minutes at medium speed. Using a spoon, stir in enough remaining flour to make a soft dough.
2. Turn dough onto a lightly floured surface and knead until smooth and elastic. Roll out dough and cut with a biscuit cutter or small glass and place on a greased pan.
3. Cover let rise in a warm place until doubled (about 45 minutes).
4. Preheat oven to 400 degrees.
5. Bake at 400 degrees until golden brown.
