Break in cold weather is very welcome
The sunshine on Sunday morning was so welcome! I know it's still winter, but please, we needed a break from last week! Got a news flash on my phone the other day when temperature was below freezing all day. “Walmart is advising their customers to wear two pair of pajamas today when they come shopping.” (Probably only in Mississippi, people feel free to go shopping in their pajamas!)

I promise not to complain when I get my water bill next time! A water bill is much better than bursted water pipes! It was interesting to hear that we had temperatures much lower than relatives living in Alaska! What happened to Global Warming?

Children’s News: Kid’s movie night Saturday, February 3rd. at 5:30 p.m. in the Family Life Center. Hot Dogs for supper with movie and popcorn to follow. Sign up needed. It’s time to sign up for summer camp. Kid’s will be going to Central Hills Baptist Retreat on June 28-30. Deadline for sign-up is Sunday, February 11th.
Prayer concerns: Betty Waggoner, Melinda Cater (Wendy Tucker’s Mother), Don Hall, Devera Easterling, Annie Lee Hawthorne, Mary Ann Warren, Clint Emmons, Tylan Williams (newborn with brain bleed) and Stephanie Bell Flynt. Prayers also for the many that have had the flu and cold virus.
Sunday was the beginning of the Center of Hope annual fund raiser. Paula Bell gave us a glimpse of services offered and numbers that comes to our local clinic. Baby bottles are ready to pick up. You can put change, bills or checks in them to assist with expenses involved.
Thanks to all with concerns that I might have been sick last week inasmuch as I didn’t have my news in the paper. I was to go for appointment to Jackson on Tuesday morning. Since the snow was predicted, I got my appointment changed to Monday morning with only an hour’s notice. No time to work on my article. (The $25 No-show for scheduled appointment might have been applied had I not rescheduled.)
Just like Wendy’s Chili
2 tablespoons oil
2 lbs. ground beef
Heat oil in large pot, make beef into large patty and let bottom brown, then break up and cook until no longer pink. Drain grease off then add:
1 cup onions
2/3 cup chopped celery
1 green pepper chopped
3 cans (14.5 oz.) stewed toma toes,
1 can (10 oz,) diced tomatoes with green chiles
1 can (15 oz) tomato sauce,
1 cup water,
2 packages chili seasoning (1.25 oz each)
1can kidney beans Undrained
1 can pinto beans Undrained
1/8 teaspoon each of salt and pepper.
Bring this to a boil and then reduce heat to low and simmer about an hour. Before serving add (1) tablespoon of white vinegar. To dress it up when serving you can add a dollop of sour cream, grated cheese and chopped green onions on top of each bowl, if desired. (I made this and it was very good. Sounds hard but really not)
Easy French Toast Casserole
1/2 cup butter
1 cup brown sugar.
Heat this in microwave until butter is melted and sugar dissolved — pour in a greased 9/13 baking dish. Place (1) 8 oz. loaf French bread, cut into (1) inch pieces on top of butter/sugar mixture. Mix in separate bowl (2) cups milk, (6) eggs, (2) teaspoons vanilla extract, (1/4) teaspoon salt, (1/2) teaspoon cinnamon. Pour this mixture over bread pressing on pieces so it will absorb good.
Mix (1/2) teaspoon cinnamon and (1) tablespoon brown sugar and sprinkle on top. Cover with plastic wrap and chill (8) hours or overnight. Bake uncovered 350 degrees for about (30) minutes until browned and bubbling.
