It was good having Betty Waggoner back in Church Sunday. She has been “under the weather” and staying close. She is returning to work this week!
Mary Ann Warren’s (microwave) Chocolate Pie:
Bake (2) regular size pie crust and set aside. Ingredients- (5) eggs, (2/3) cup plain flour, (3) heaping tablespoons Cocoa, (2) cups sugar, (3) cups milk and (2/3) stick butter or margarine. Separate eggs and put egg yolks in large microwave bowl. beat egg yolks, add sugar and mix well, sift flour and cocoa into mixture. Add milk slowly until mixed well. Put in microwave on high speed for (8) minutes. The eggs will thicken,so use a fork to stir until creamy, not lumpy. Add butter, or margarine. Put back in microwave and cook (2) more minutes, stir again and if not thick as you like do that again. Be sure mixture is smooth and pour in baked shells.
Meringue: (5) egg whites beaten until stiff, keep beating and add (1/4) cup sugar and (1) teaspoon vanilla extract. Beat this good until they stand up. Pour on top of filling and seal along edges (this keeps egg whites from being runny.) Bake until golden brown in 325 degree oven. This can be changed to coconut pie - just leave cocoa out and add (2/3) cup coconut in cooked filling before putting in shells and then put about 1/2) cup coconut on top of egg whites after putting them on top of pie then bake.
We are truly blessed with our weather! We could be having snow, flooding and wind storms like other areas are having!
Don’t forget that Sunday, 3/11, clocks go forward (1) Hour. Yay, more daylight!
Have a God Blessed week and share it with others!
